海绵蛋糕


06/07/2009 - 昨晚看见了Ching 的牛油zebra蛋糕, 太是诱惑了,但是我不喜欢制做牛油蛋糕(懒惰清洗),于是今天制做了海绵蛋糕,过瘾过瘾一下。蛋糕切成两层,中间抹上了蓝莓酱,真好吃。松软又不油腻。制做简易。
INGREDIENTS:
4 eggs
110g castor sugar
110g plain flour (sieved)
1 tbsp fresh milk
50g butter (melted)

METHOD:
1. Beat eggs and sugar on medium speed till fluffy. (10 mins)

2. Fold in sieved flour and milk with hand-held wire balloon whisk. Do not deflate the air bubbles.
3. Finally, add in melted butter as you fold in slowly,

4. Pour cake mixture into cake pan lined with greaseproof paper. Bake in a preheated oven at 180˚C for 20 – 25 minutes.

♥ You can separate the batter into two portion. Add in instant coffee solution into one of the portion of batter and mix well.
